Fruit Hat: Sour Ale with Pineapple and Mango - To create a wildly tropical and naturally fruity beer, we secondarily fermented a pale wheat beer for 14 months with wild bacteria and yeast. We then took it a step further and piled on huge additions of pineapple and mango to create an explosively refreshing and fruit-forward sour ale.
